Ingredients
2 pounds Yukon Gold potatoes
1 pound fresh green beans
6 slices thick-cut bacon
3 tablespoons butter
1/2 cup heavy cream
2 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/4 cup breadcrumbs (optional)
Instructions
1. Preheat oven to 400°F (200°C). Spread green beans on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 15 minutes.
2. Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
3. Peel and cube Yukon Gold potatoes. Boil in salted water for 15 minutes or until tender.
4. Drain and mash potatoes with butter, heavy cream, garlic, rosemary, salt, and pepper.
5. In a buttered 9×13-inch baking dish, layer green beans and mashed potatoes. Top with bacon, thyme, and optional breadcrumbs.
6. Bake at 375°F (190°C) for 20 minutes until golden and crispy on top. Serve warm.
