Ingredients

400g beef (ribeye or sirloin)

4 tablespoons soy sauce

2 tablespoons brown sugar

2 cloves garlic minced

1 tablespoon fresh ginger grated

1 tablespoon sesame oil

1 cup cooked corn

2 medium potatoes cubed

2 cups fresh greens (kale or spinach)

1 red bell pepper sliced

2 green onions chopped

1 teaspoon chili flakes

3 tablespoons mayonnaise

1 tablespoon sriracha

1 tablespoon lime juice

Instructions

1. In a bowl, mix soy sauce, brown sugar, garlic, ginger, and sesame oil. Add sliced beef and marinate for at least 30 minutes.

2. In a small bowl, whisk together mayo, sriracha, and lime juice to make the creamy sauce.

3. Heat a skillet and sear the marinated beef in batches for 2–3 minutes per side until caramelized.

4. Cube the potatoes and roast or pan-fry them until crispy on the outside and soft inside.

5. In serving bowls, layer optional rice, beef, corn, potatoes, greens, and bell peppers.

6. Drizzle with the creamy sauce and garnish with green onions and chili flakes. Serve warm.

Notes

Make sure the beef is thinly sliced to soak up the marinade quickly.

Keep the sauce separate when storing to prevent sogginess.

Add a fried egg on top for an extra layer of richness.
