Ingredients
1 pound ground beef
1/4 cup soy sauce
2 tablespoons brown sugar
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 teaspoons sesame oil
3 cups cooked white rice
1 cup julienned carrots
2 cups fresh spinach
1 cup cucumber, sliced
4 large eggs
2 tablespoons chopped green onions
1 tablespoon sesame seeds
Instructions
1. Heat a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
2. Drain any excess grease. Add soy sauce, brown sugar, garlic, ginger, and sesame oil. Stir and simmer for 2–3 minutes to blend flavors.
3. While the beef simmers, blanch or sauté the spinach. Slice the cucumber and julienne the carrots.
4. In a separate pan, fry the eggs sunny side up until the whites are set but yolks are still runny.
5. Divide cooked rice between four bowls. Top with beef, spinach, carrots, cucumber, and a fried egg.
6. Garnish with chopped green onions and sesame seeds. Serve warm and enjoy!
Notes
You can swap beef with ground turkey or chicken for a lighter version.
