Ingredients
6 Eggs
3/4 cup Granulated Sugar
3/4 cup All-Purpose Flour
1 teaspoon Baking Powder
1/4 teaspoon Salt
1 teaspoon Vanilla Extract
8 ounces Cream Cheese
1/2 cup Powdered Sugar
1 1/2 cups Heavy Whipping Cream
1 1/2 cups Fresh Raspberries
A few drops Pink Gel Food Coloring (optional)
2 tablespoons Almond Slivers or Sprinkles (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
2. Beat the eggs until thick and pale. Gradually add the sugar while beating.
3. Gently fold in sifted flour, baking powder, and salt. Stir in vanilla extract.
4. Pour the batter into the prepared pan and bake for 10–12 minutes until the top springs back.
5. Turn the warm cake onto a towel dusted with powdered sugar, peel off the parchment, and roll up with the towel. Let it cool completely.
6. Beat the cream cheese until smooth. Add powdered sugar and vanilla.
