Ingredients

2 pounds Yukon Gold potatoes

2 medium yellow onions, thinly sliced

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Slice potatoes into 1/4-inch rounds. Place them in a pot of salted water and bring to a boil. Parboil for 5–7 minutes until just tender. Drain and let cool slightly.

2. In a large skillet, heat 1 tablespoon butter and 1 tablespoon olive oil over medium-low heat. Add onions and cook slowly for 15–20 minutes, stirring occasionally, until golden and caramelized. Remove and set aside.

3. In the same skillet, heat the remaining butter and olive oil. Add potato slices in a single layer (in batches if needed). Cook for 3–4 minutes per side until golden brown and crispy.

4. Return onions to the skillet. Gently toss with potatoes and season with salt and black pepper.

5. Sprinkle fresh parsley on top and serve hot.

Notes

Use a non-stick or cast-iron skillet for the best crispy results.

Don’t overcrowd the pan when frying potatoes—cook in batches if needed.

Add a clove of garlic during the final minute of onion caramelization for extra flavor.
