Ingredients

0.25 cup chia seeds

1 cup coconut milk (full-fat preferred)

1 teaspoon vanilla extract

1 to 2 teaspoons maple syrup or honey (optional)

1 cup dragon fruit (fresh or thawed from frozen)

1 ripe mango, diced

Optional toppings: edible flowers, granola, or pumpkin seeds

Instructions

1. In a bowl or jar, mix chia seeds, coconut milk, vanilla extract, and sweetener (if using). Stir well.

2. Let the mixture sit for 5 minutes, then stir again to avoid clumping. Cover and refrigerate for at least 2 hours or overnight.

3. Blend dragon fruit into a smooth puree. If you want a thicker texture, mix in a spoonful of soaked chia pudding.

4. Peel and dice the mango into small cubes.

5. In serving glasses, layer the chia pudding on the bottom, then add the blended dragon fruit, and top with mango chunks.

6. Garnish with edible flowers, granola, or pumpkin seeds if desired.

7. Serve chilled or store in the fridge until ready to enjoy.

Notes

Use ripe mangoes for the best natural sweetness.

Let the chia soak overnight for the thickest texture.

Store layers separately if making ahead for best texture and color.
