Ingredients
8 rice paper wrappers
1 ripe mango, sliced into thin strips
1 red bell pepper, julienned
1 medium carrot, shredded
1/2 cucumber, thinly sliced
1 cup purple cabbage, shredded
1/4 cup fresh mint leaves
1/4 cup fresh cilantro leaves
2 ounces rice vermicelli noodles, cooked and cooled
1 tablespoon lime juice
1/4 cup almond butter
1 tablespoon soy sauce or tamari
1 tablespoon maple syrup
1 clove garlic, minced
1/2 teaspoon grated ginger
3 tablespoons warm water
Instructions
1. Wash and prepare all vegetables and herbs. Slice the mango and veggies into thin strips.
2. Cook vermicelli noodles according to package instructions, then drain and set aside.
3. In a bowl, whisk together almond butter, soy sauce, maple syrup, lime juice, garlic, ginger, and warm water until smooth. Adjust consistency if needed.
4. Fill a shallow dish with warm water. Dip a rice paper wrapper in for 10–15 seconds, then lay it flat on a damp surface.
5. Place a small amount of noodles, mango, veggies, and herbs in the center of the wrapper. Fold the bottom up, then fold in the sides, and roll tightly.
6. Repeat with remaining wrappers and ingredients.
7. Serve immediately with almond butter dipping sauce. Garnish with sesame seeds or chopped peanuts if desired.
