Ingredients
4 salmon fillets
2 cups cherry tomatoes
1 cup Kalamata olives
3⁄4 cup crumbled feta cheese
1⁄4 cup fresh parsley, chopped
1 lemon, thinly sliced
2 tablespoons whole grain mustard
2 tablespoons olive oil
3 garlic cloves, minced
1⁄2 teaspoon salt
1⁄2 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Arrange salmon fillets skin-side down on the sheet. Surround with cherry tomatoes and olives. Add lemon slices between fillets.
3. Mix olive oil, mustard, garlic, parsley, salt, and pepper in a small bowl.
4. Brush the mixture generously over the salmon. Sprinkle feta on and around the fish.
5. Bake for 15–18 minutes, until salmon is flaky and tomatoes blister.
6. Garnish with extra parsley and a squeeze of lemon before serving.
Notes
Use wild-caught salmon for best flavor and texture.
Make sure all veggies are cut evenly for uniform roasting.
