Description

Impress your family or dinner guests with this quick and easy dinner idea: Mediterranean Stuffed Salmon. This healthy recipe combines flaky salmon fillets with a savory, Mediterranean-inspired filling of sautéed spinach, creamy feta, and tangy sun-dried tomatoes. It’s a restaurant-quality dish that’s easy to prepare and packed with nutritious ingredients. Perfect for weeknight meals, food prep, or healthy dinner ideas that don’t compromise on flavor.

Ingredients

4 salmon fillets

1 cup crumbled feta cheese

1 cup sun-dried tomatoes, chopped

2 cups fresh spinach

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon chopped fresh dill or parsley

1 teaspoon salt

1/2 teaspoon black pepper

Lemon wedges, for serving (optional)

Instructions

1. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.

2. Add spinach and cook until wilted. Remove from heat.

3. Stir in crumbled feta, sun-dried tomatoes, and fresh herbs.

4. Cut a pocket into each salmon fillet without slicing all the way through.

5. Season fillets inside and out with salt and pepper.

6. Stuff each fillet with the spinach-feta mixture. Press gently to seal.

7. Place stuffed salmon on a lined baking sheet. Drizzle with olive oil.

8. Bake at 400°F (200°C) for 15–18 minutes, or until salmon is fully cooked.

9. Serve hot with a squeeze of lemon and your favorite sides.

Notes

Use thick, center-cut salmon fillets for easier stuffing and even cooking.

Don’t overstuff the fillets or the filling may spill during baking.

For extra flavor, add a squeeze of lemon or serve with tzatziki sauce.
