Ingredients
4 salmon fillets
1 cup crumbled feta cheese
1 cup sun-dried tomatoes, chopped
2 cups fresh spinach
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon chopped fresh dill or parsley
1 teaspoon salt
1/2 teaspoon black pepper
Lemon wedges, for serving (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
2. Add spinach and cook until wilted. Remove from heat.
3. Stir in crumbled feta, sun-dried tomatoes, and fresh herbs.
4. Cut a pocket into each salmon fillet without slicing all the way through.
5. Season fillets inside and out with salt and pepper.
6. Stuff each fillet with the spinach-feta mixture. Press gently to seal.
7. Place stuffed salmon on a lined baking sheet. Drizzle with olive oil.
8. Bake at 400°F (200°C) for 15–18 minutes, or until salmon is fully cooked.
9. Serve hot with a squeeze of lemon and your favorite sides.

Use thick, center-cut salmon fillets for easier stuffing and even cooking.
