Ingredients

12 mini burger buns

1 pound ground beef (80/20)

6 slices cheddar cheese (each cut in half to make 12 pieces)

3 large leaves lettuce (torn into 12 small pieces)

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

2 tablespoons mayonnaise

2 tablespoons ketchup

2 tablespoons butter (melted, for buns)

1 tablespoon vegetable oil (for cooking patties)

sesame seeds (optional, for topping buns)


Instructions

1. Slice all 12 mini buns in half. Brush the tops with melted butter and sprinkle with sesame seeds if not already topped. Toast the buns, cut side down, in a skillet or under a broiler until golden brown. Set aside.

2. Divide ground beef into 12 equal portions (about 1.3 ounces each), roll into balls, and flatten into patties just wider than the buns. Season both sides with salt and pepper.

3. Heat vegetable oil in a large skillet over medium-high. Add patties in batches; cook for 2–3 minutes per side until browned and cooked through.

4. In the last minute, top each patty with a slice of cheddar cheese. Cover the pan to melt the cheese.

5. Spread about 1/2 teaspoon each mayonnaise and ketchup on the bottom of each toasted bun. Add a lettuce piece, then a cheeseburger patty. Cap with the top bun and secure with a toothpick.

Notes

For the juiciest burgers, use freshly ground beef with an 80/20 blend.

Assemble just before serving to keep buns from getting soggy.

Add sliced tomatoes, pickles, or onions for extra flavor and crunch.
