Ingredients

1 chocolate cake layer (baked and cooled)

1 cup crushed chocolate cookies

6 tablespoons butter, melted

16 ounces cream cheese, softened

3/4 cup granulated sugar

1 teaspoon peppermint extract

34 drops green food coloring (optional)

1 1/4 cups heavy cream

1 cup semi-sweet chocolate, chopped

1/2 cup whipping cream

Chocolate shavings and mint leaves for garnish


Instructions

1. Bake your chocolate cake layer in a springform pan and let it cool completely.

2. Mix crushed chocolate cookies with melted butter and press onto the cake base if using as an extra layer.

3. Beat cream cheese and sugar until smooth and fluffy.

4. Add peppermint extract, green food coloring, and 3/4 cup of heavy cream to the cheesecake mixture and whip until smooth.

5. Spread the cheesecake mixture evenly over the cooled cake base. Smooth the top and chill for at least 4 hours or overnight.

6. Heat remaining 1/2 cup heavy cream until simmering, pour over chopped chocolate, and stir until ganache is glossy.

7. Pour ganache over the chilled cake and let it drip naturally down the sides.
