Ingredients

1 lb shrimp, peeled and deveined

1 tbsp Old Bay seasoning

1 tbsp olive oil

2 cloves garlic, minced

4 large flour tortillas

1 cup guacamole

1 cup cooked rice

1/4 cup red onion, diced

1 cup shredded cheese (cheddar or Mexican blend)

2 tbsp fresh cilantro, chopped

Instructions

1. Toss shrimp with olive oil, Old Bay seasoning, and garlic.

2. Sear shrimp in a skillet over medium-high heat, about 2 minutes per side until pink and golden.

3. Warm tortillas until pliable, then spread guacamole in the center.

4. Add rice, cooked shrimp, red onion, shredded cheese, and cilantro.

5. Fold in sides and roll tightly into a burrito.

6. Toast seam-side down in a pan until golden and slightly crisp.

7. Slice in half, garnish with extra cilantro, and serve with salsa or lime wedges.

Notes

Pat the shrimp dry before seasoning to get a perfect sear.

Toasting the burrito adds flavor and prevents it from getting soggy.

Use freshly made guacamole for the best taste, or swap it for sliced avocado in a pinch.
