1 and 1/2 cups all-purpose flour

1/2 cup unsalted butter

1 cup brown sugar

1 large egg

1 and 1/4 cups unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or chopped dates (optional)

Powdered sugar for dusting


Instructions

1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan or line with parchment paper.

2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.

3. In a large bowl, cream butter and brown sugar until fluffy.

4. Beat in the egg, then add applesauce and vanilla; mix until smooth.

5. Gradually mix in the dry ingredients.

6. Fold in nuts and raisins or dates, if using.

7. Pour batter into the pan and smooth the top.

8. Bake 35–40 minutes or until a toothpick comes out clean.
