Ingredients
450g boneless skinless chicken thighs or breasts
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic minced
1/2 cup BBQ sauce
2 tablespoons honey
2 cups chicken broth
1 cup uncooked long grain rice
2 green onions chopped
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
2. Sear chicken on both sides for 3–4 minutes until golden. Remove and set aside.
3. In the same skillet, add garlic and sauté for 30 seconds. Stir in BBQ sauce and honey. Simmer 1–2 minutes.
4. Pour in chicken broth and rice. Stir to combine and bring to a simmer.
5. Nest the chicken back on top. Cover with lid or foil.
6. Reduce heat and cook for 20–25 minutes until rice is tender and liquid is absorbed.
7. Remove from heat and rest 5 minutes. Garnish with green onions. Serve warm.
Notes
Use chicken thighs for extra juiciness, but breasts work well too.
