Ingredients

1 lb boneless skinless chicken thighs

1 1/2 cups pineapple chunks

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp ground cumin

1/2 tsp chili powder

3/4 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1/4 cup chopped fresh cilantro

1/4 cup diced red onion

8 small corn or flour tortillas

Lime wedges for serving


Instructions

1. Cut chicken thighs into bite-sized strips. Toss in a bowl with olive oil, smoked paprika, cumin, chili powder, salt, black pepper, and garlic powder.

2. Heat a large skillet over medium-high heat. Sear chicken for 6–8 minutes, stirring occasionally, until cooked and browned. Remove from skillet.

3. In the same skillet, add pineapple chunks. Cook for 3–4 minutes until lightly charred.

4. Warm tortillas in a dry pan or over a gas flame for 10–15 seconds per side.

5. Fill each tortilla with chicken and pineapple. Top with red onion, cilantro, and lime juice. Serve immediately.

Notes

Use fresh pineapple for best caramelization and flavor.

Make sure your skillet is hot before adding chicken to get a proper sear.

Warm tortillas just before assembling to keep them soft and flexible.
