Ingredients
4 bone-in, skin-on chicken thighs
1½ pounds Yukon gold potatoes, cut into 1-inch cubes
1 medium yellow onion, chopped
3 garlic cloves, minced
1½ cups chicken broth
2 tablespoons all-purpose flour
2 tablespoons olive oil
2 tablespoons unsalted butter, divided
1 sprig fresh rosemary (or 1 teaspoon dried rosemary/thyme)
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Pat chicken thighs dry and season with salt and pepper.
2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken, skin-side down, and sear until golden brown, about 5-7 minutes. Flip and cook another 2-3 minutes. Remove chicken and set aside.
3. Add 1 tablespoon butter and the chopped onion to the skillet. Sauté 2-3 minutes until soft, then stir in minced garlic and cook 1 minute.
4. Add cubed potatoes and sprinkle flour over the veggies, stirring to coat.
5. Gradually pour in chicken broth, scraping up browned bits. Add rosemary and season lightly with additional salt and pepper.
6. Return chicken thighs to skillet, skin-side up, nestling among the potatoes. Spoon sauce over potatoes only.
7. Bake uncovered at 400°F (200°C) for 25-30 minutes, until chicken reaches 165°F and potatoes are fork-tender.
8. Remove chicken; if needed, simmer pan juices and potatoes over medium heat for 2-3 minutes until gravy thickens.
9. Stir in remaining 1 tablespoon butter for a glossy gravy, discard rosemary, return chicken to skillet, and spoon gravy over top. Serve hot!
Notes
If using boneless chicken, reduce baking time and check for doneness at 20 minutes.
Swap in other root veggies (carrots, parsnips) for variety.
For a creamier gravy, add 2 tablespoons heavy cream after thickening.
