Ingredients
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 pound ground beef
2 tablespoons taco seasoning
2 cups beef broth
1 can (14.5 ounces) diced tomatoes with juices
2 cups rotini pasta
1 ½ cups shredded cheddar cheese, divided
2 tablespoons chopped fresh cilantro (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3 minutes until translucent.
2. Add ground beef and cook until browned, breaking it apart as it cooks.
3. Stir in garlic and taco seasoning. Cook for 1 minute until fragrant.
4. Pour in beef broth and diced tomatoes. Stir in rotini pasta.
5. Bring to a boil, then reduce heat to simmer. Cover and cook 12–15 minutes, stirring occasionally.
6. When pasta is cooked and liquid mostly absorbed, stir in ¾ cup cheddar cheese until melted.
7. Top with remaining cheese, cover for 1–2 minutes until melted. Garnish with cilantro and serve.
Notes
Use lean ground beef (90/10) for less grease and a lighter texture.
Stir the pasta occasionally while cooking to prevent sticking.
For extra creaminess, add a splash of milk or sour cream before serving.
