Ingredients
9 cups rice Chex cereal
1 1/2 cups white chocolate chips
2 tablespoons unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon orange extract
1 tablespoon finely grated orange zest
1/4 cup instant vanilla pudding mix
2 tablespoons orange gelatin powder
1 1/2 cups powdered sugar
1/2 cup orange candy melts optional
1 teaspoon vegetable oil optional
Instructions
1. Add the rice Chex cereal to a very large mixing bowl and set aside.
2. In a microwave-safe bowl, combine the white chocolate chips and unsalted butter. Microwave in 20–30 second bursts, stirring after each, until melted and smooth.
3. Stir in the vanilla extract, orange extract, finely grated orange zest, instant vanilla pudding mix, and orange gelatin powder until fully dissolved and the mixture is thick, glossy, and pale orange.
4. Pour the warm orange creamsicle mixture over the cereal. Gently fold with a spatula until all of the cereal is evenly coated.
5. Transfer the coated cereal to a large zip-top bag or container with a tight-fitting lid. Add the powdered sugar.
6. Seal and shake vigorously until every piece is well coated in powdered sugar and no sticky spots remain. Add a little extra powdered sugar if needed.
7. Spread the coated cereal in a single layer on a parchment-lined baking sheet and let it cool and set for 15–20 minutes.
8. For the drizzle, melt the orange candy melts with the vegetable oil in a microwave-safe bowl, heating in short bursts and stirring until smooth.
9. Drizzle the melted candy evenly over the cooled puppy chow and allow it to set completely.
10. Break up any large clusters, transfer to a serving bowl or airtight container, and enjoy.
Notes
Measure and prepare all ingredients before melting the chocolate so you can work quickly while the coating is warm and smooth.
Make sure the cereal is completely cool and dry before storing to keep the mix crisp and prevent clumping.
Adjust the orange flavor to taste by adding a little more orange extract or zest if you prefer a stronger creamsicle punch.
