Ingredients
115 grams cream cheese
60 grams powdered sugar
1 teaspoon vanilla extract
200 grams soft caramels
2 tablespoons heavy cream
120 grams chopped pecans
Instructions
1. In a bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and thick.
2. Scoop small portions and roll into balls. Place on a parchment-lined tray and freeze for 20 minutes.
3. In a saucepan over low heat, melt the soft caramels with heavy cream. Stir until smooth and fully combined.
4. Dip each chilled cream cheese ball into the caramel mixture. Let excess drip off.
5. Immediately roll each ball in chopped pecans, pressing lightly so the nuts stick well.
6. Return the coated balls to the parchment paper and chill for 10 minutes to set.
7. Serve chilled or at room temperature. Store leftovers in an airtight container in the fridge for up to 5 days.
