Ingredients

340g rotini pasta

3/4 cup mayonnaise

1/2 cup sour cream

1/2 red onion, thinly sliced

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 cup arugula

1/2 tsp salt

1/2 tsp black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Drain and rinse with cold water. Let cool completely.

2. Slice the red onion, chop the cucumber, halve the tomatoes, and prepare the arugula.

3. In a large bowl, whisk together mayonnaise, sour cream, salt, and pepper until smooth.

4. Add the cooled pasta to the bowl of dressing, followed by all the veggies and arugula. Mix well.

5. Chill in the fridge for at least 30 minutes. Serve cold and enjoy!

Notes

Rinse pasta under cold water immediately after boiling to stop cooking and prevent clumping.

If making ahead, stir before serving and add a bit more dressing if needed.

You can swap mayo with Greek yogurt for a lighter version.
