Description

These Pumpkin Pie Cheesecake Truffles are the ultimate fall dessert idea — creamy, spiced, and shaped like adorable little pumpkins. Whether you’re looking for an easy recipe for a Thanksgiving treat, a fun no-bake dessert, or quick party bites, this healthy-ish snack combines rich cheesecake and pumpkin flavors with crunchy pecans and a chocolate drizzle. Perfect for fall gatherings, gift boxes, or cozy nights in.

Ingredients

170g cream cheese

120g pumpkin puree

100g powdered sugar

1 teaspoon vanilla extract

2 teaspoons pumpkin pie spice

120g graham cracker crumbs

100g semi-sweet chocolate chips

60g chopped pecans

50g granulated sugar (for coating)

100g white chocolate or candy melts (optional)

Instructions

1. In a mixing bowl, beat the softened cream cheese until smooth.

2. Add pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until combined.

3. Stir in graham cracker crumbs until a thick dough forms.

4. Scoop tablespoon-sized portions and roll into balls.

5. Use a toothpick or knife to create light indentations around the sides to resemble pumpkins.

6. Place on a parchment-lined baking sheet.

7. Refrigerate for 1 hour or freeze for 20-30 minutes to firm.

8. Roll the chilled truffles in granulated sugar.

9. Melt the semi-sweet chocolate and drizzle over each truffle.

10. Top with chopped pecans while chocolate is still wet.

11. Let the chocolate set fully before serving.

12. Store in an airtight container in the fridge.

Notes

Chill the truffle mixture well before shaping for best results.

For sharper pumpkin ridges, use a thin skewer or toothpick.

You can freeze the shaped, undecorated truffles for longer storage and decorate later.
