Ingredients
3 cups cooked chicken, shredded
6 cups chicken broth
4 tablespoons unsalted butter
1/3 cup all-purpose flour
1 medium yellow onion, diced
2 medium carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 cup whole milk
1 can refrigerated biscuit dough, 8 biscuits
Salt and black pepper, to taste
Fresh parsley, optional, chopped
Instructions
1. In a large Dutch oven or pot, melt butter over medium heat. Add diced onion, carrots, and celery. Cook for 5–7 minutes until softened, then stir in garlic and cook for 1 more minute.
2. Sprinkle in the flour and stir for 2 minutes to form a roux. Slowly pour in the chicken broth while whisking, bring to a simmer, and cook for 5 minutes until slightly thickened.
3. Stir in the shredded chicken and whole milk. Let it heat through and return to a low simmer.
4. Cut each biscuit from the can into 4 pieces to make 32 dumplings.
5. Drop biscuit pieces into the simmering soup. Cover and reduce heat to low. Cook for 15 minutes without removing the lid.
6. Season with salt and pepper. Garnish with fresh parsley if desired, and serve warm.
Notes
Use rotisserie chicken for the fastest prep.
Keep the pot covered while dumplings cook to avoid them becoming gummy.
Add a splash of broth or milk when reheating to restore creaminess.
