Description

Ingredients

3 cups all-purpose flour

2 cups granulated sugar

1 tablespoon baking powder

0.5 teaspoon salt

1 cup unsalted butter, softened

6 large egg whites

1.5 cups whole milk

2 teaspoons vanilla extract

Gel food coloring, assorted pastel shades

6 cups buttercream frosting

1 cup white chocolate

0.5 cup heavy cream

0.25 cup pastel sprinkles


Instructions

1. Cream the butter and sugar together until light and fluffy.

2. Add egg whites one at a time, then mix in the vanilla extract.

3. In a separate bowl, whisk together flour, baking powder, and salt.

4. Alternate adding the flour mixture and milk to the batter until fully combined.

5. Divide batter into 4 to 6 bowls. Add a drop of gel food coloring to each and mix.

6. Pour into greased, lined cake pans and bake at 350°F (175°C) for 25-30 minutes.

7. Cool layers completely on a wire rack.

8. Trim tops to level them, then stack from darkest to lightest with buttercream in between.

9. Apply a crumb coat and chill for 20 minutes, then apply a smooth final buttercream layer.

10. Melt white chocolate and cream together, let cool slightly, and drip over edges.

11. Decorate with buttercream swirls on top and pastel sprinkles around the base.

12. Chill until ready to serve.

Notes

Use gel food coloring for vibrant yet soft pastel shades without affecting batter consistency.

Chill the cake after the crumb coat for best results when applying the final frosting.

For an even drip, let the ganache cool slightly so it doesn’t run too fast.
