Ingredients

2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

2 teaspoons vanilla extract

2 1/2 teaspoons unflavored gelatin

1 1/2 cups raspberries (fresh or frozen)

1 tablespoon lemon juice

2 tablespoons powdered sugar


Instructions

1. Sprinkle gelatin over 1/4 cup of the cold milk in a bowl and let it bloom for 5–10 minutes.

2. Heat the heavy cream, remaining milk, and granulated sugar in a saucepan over medium heat until hot but not boiling.

3. Remove from heat and stir in the bloomed gelatin until completely dissolved. Add vanilla extract.

4. Pour the mixture into serving glasses or molds. Chill in the fridge for at least 4 hours or until set.

5. For the topping, cook raspberries, lemon juice, and powdered sugar in a saucepan until berries break down. Strain to remove seeds. Let cool.

6. Once panna cotta is set, top with raspberry sauce and garnish with fresh raspberries or mint if desired.

Notes

For the best texture, don’t let the cream mixture boil—keep it just below simmering.

Use agar-agar for a vegetarian alternative, but follow different setting instructions.

Make the raspberry topping in advance and chill it separately to avoid melting the cream layer.
