Ingredients

3/4 cup all-purpose flour

2/3 cup granulated sugar

3 large eggs

1 tablespoon unsweetened cocoa powder

1/4 cup buttermilk

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 tablespoon red food coloring

1 teaspoon vanilla extract

1/4 teaspoon salt

8 ounces cream cheese, softened

1 cup powdered sugar

4 tablespoons butter, softened


Instructions

1. Preheat the oven to 350°F and line a 10×15-inch jelly roll pan with parchment paper.

2. In a large bowl, beat eggs until thick and frothy. Slowly add sugar and continue beating until pale.

3. Mix in vanilla extract, red food coloring, and buttermilk.

4. In a separate bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.

5. Gently fold dry ingredients into wet mixture until just combined.

6. Pour batter into prepared pan, smooth out evenly, and bake for 10–12 minutes until the top springs back.

7. Turn the cake out onto a powdered sugar-dusted towel and roll it up while warm. Let cool completely.

8. Beat cream cheese, butter, powdered sugar, and vanilla until smooth to make the filling.

9. Carefully unroll the cooled cake and spread the filling evenly.

10. Roll the cake back up without the towel and wrap in plastic wrap. Chill for 1 hour.

11. Slice and serve chilled. Optionally, dust with powdered sugar or drizzle with melted white chocolate.

Notes
