Ingredients

2 ½ cups all-purpose flour

1 ½ cups granulated sugar

2 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1 cup buttermilk

1 cup vegetable oil

2 large eggs

1 teaspoon white vinegar

1 tablespoon red food coloring

16 ounces cream cheese (room temperature)

1 ½ cups powdered sugar

2 teaspoons vanilla extract


Instructions

1. Grease and line two 9-inch round cake pans with parchment paper. Preheat oven to 350°F (175°C).

2. In a large bowl, whisk flour, sugar, cocoa powder, baking soda, and salt.

3. In another bowl, mix buttermilk, oil, eggs, vinegar, vanilla, and food coloring.

4. Combine wet and dry mixtures, stirring until smooth and red.

5. In a separate bowl, beat cream cheese until smooth. Add powdered sugar and vanilla; beat until fluffy.

6. Pour red velvet batter into pans. Add spoonfuls of cheesecake mixture and swirl with a knife.

7. Bake for 30-35 minutes. Cool for 10 minutes in pans, then completely on racks.

8. Frost with remaining cheesecake mix or cream cheese frosting. Decorate with swirls and crumbs.

Notes

Always bring cream cheese to room temperature before beating to avoid lumps.

Don’t over-swirl the cheesecake layer; you want a marble, not a blend.
