Ingredients
350g rigatoni pasta
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
2 teaspoons Cajun seasoning
500g steak tips (sirloin or ribeye), cubed
1 tablespoon olive oil
Salt and pepper to taste
Instructions
1. Boil a large pot of salted water. Add the rigatoni and cook until al dente, then drain and set aside, reserving about 1/2 cup of pasta water.
2. Season the steak cubes generously with Cajun seasoning, salt, and pepper.
3. Heat olive oil in a skillet over high heat. Sear the steak tips for about 2-3 minutes per side until browned. Remove from the pan and let rest.
4. In a clean pan, melt butter over medium heat. Add minced garlic and sauté until fragrant.
5. Stir in heavy cream and simmer for 2–3 minutes.
6. Add grated parmesan cheese, whisking until melted and smooth. Season to taste.
7. Add rigatoni to the sauce and toss to coat. If the sauce is too thick, stir in some reserved pasta water.
