Ingredients
1 center-cut beef tenderloin
2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons butter
3 large yellow onions, thinly sliced
4 sprigs fresh thyme
2 cloves garlic, minced
2 tablespoons prepared horseradish
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons chopped chives or parsley
Instructions
1. Pat the beef dry and season generously with salt and pepper.
2. Sear the tenderloin in hot olive oil until browned on all sides.
3. Transfer to a 425°F oven and roast for 20–25 minutes or until internal temperature reaches 125–130°F.
4. Let the tenderloin rest for at least 10 minutes before slicing.
5. In a large skillet, melt butter and caramelize onions over medium-low heat for 25–30 minutes. Add garlic and thyme in the final minutes.
6. In a bowl, mix horseradish, sour cream, and mayonnaise. Add salt, pepper, and chives. Chill until serving.
7. Slice tenderloin and serve with onions and sauce. Garnish with herbs if desired.
Notes
Let the meat rest after roasting to lock in juices.
Use a meat thermometer to avoid overcooking.
Make the horseradish sauce up to a day ahead for even better flavor.
