1 center-cut beef tenderloin

1 teaspoon black pepper

2 tablespoons olive oil

3 tablespoons butter

3 large yellow onions, thinly sliced

4 sprigs fresh thyme

2 cloves garlic, minced

2 tablespoons prepared horseradish

1/2 cup sour cream

1/4 cup mayonnaise

2 tablespoons chopped chives or parsley


Instructions

1. Pat the beef dry and season generously with salt and pepper.

2. Sear the tenderloin in hot olive oil until browned on all sides.

3. Transfer to a 425°F oven and roast for 20–25 minutes or until internal temperature reaches 125–130°F.
