Ingredients

4 boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh baby spinach

1 cup shredded mozzarella cheese

1/2 cup chopped roasted red peppers

1 teaspoon Italian seasoning

Toothpicks or kitchen twine


Instructions

1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add spinach and cook until wilted, about 2 minutes. Remove from heat and stir in roasted red peppers and mozzarella. Season with half the Italian seasoning.

2. Cut a pocket into each chicken breast without slicing all the way through. Season both sides with salt, pepper, and remaining Italian seasoning. Stuff each pocket with the spinach mixture and secure with toothpicks.

3. Heat remaining 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.

4. Transfer skillet to a preheated oven at 375°F (190°C). Roast for 15–20 minutes or until internal temperature reaches 165°F (74°C). Let rest 5 minutes before serving.

Notes

Use a meat thermometer to ensure the chicken reaches 165°F internally.
