Ingredients

2 lbs sweet potatoes

2 tablespoons olive oil

1 tablespoon maple syrup

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped


Instructions

1. Wash and scrub 2 lbs of sweet potatoes (no peeling needed). Cut into 1-inch cubes.

2. In a bowl, toss the cubes with 2 tablespoons olive oil, 1 tablespoon maple syrup, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Spread potatoes in a single layer.

4. Roast for 25-30 minutes, flipping halfway, until golden and tender.

5. Transfer to a serving bowl and sprinkle with 1 tablespoon chopped parsley. Serve warm.

Notes

Cut the sweet potatoes evenly for consistent roasting.

Don’t overcrowd the pan or the potatoes will steam instead of roast.
