Ingredients

400g (14 oz) salmon, cooked and flaked (or well-drained canned)

75g (3/4 cup) breadcrumbs

1 large egg

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 stalks green onion, finely sliced

2 tablespoons fresh parsley, chopped

zest from 1/2 lemon

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil (for frying)

1/3 cup mayonnaise

2 tablespoons sour cream

2 tablespoons freshly squeezed lemon juice

1 clove garlic, finely grated

1 teaspoon Dijon mustard

1 tablespoon fresh parsley, minced

salt and black pepper, to taste


Instructions

1. In a large bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, green onion, parsley, lemon zest, minced garlic, salt, and black pepper. Mix until just combined.

2. Divide the mixture into 6 portions and shape each into a patty, about 3/4-inch thick. Place on a plate and chill for 10–15 minutes.

3. While patties chill, make the sauce: stir together mayonnaise, sour cream, lemon juice, garlic, Dijon mustard, parsley, salt, and pepper in a small bowl. Cover and refrigerate.

4. Heat olive oil in a large nonstick skillet over medium heat. Add patties and cook for 3–4 minutes per side, or until golden brown and heated through. Cook in batches if necessary.

5. Serve the patties warm, topped with the creamy lemon-garlic sauce and a sprinkle of extra parsley.

Notes

For best results, chill the shaped patties before frying to help them hold together.

Use gluten-free breadcrumbs for a gluten-free version.

The creamy sauce can be made a day ahead and kept in the fridge.
