Ingredients
4 cups Rice Chex cereal
2 cups Golden Grahams cereal (or similar honey graham cereal)
1 1/2 cups sweetened shredded coconut, divided
1 1/4 cups semi-sweet chocolate chips
3/4 cup caramel bits or chopped soft caramels
2 tablespoons coconut oil or unsalted butter
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
1 1/2 cups powdered sugar
1/4 cup mini chocolate chips (optional, for topping)
Instructions
1. Toast the coconut in a dry skillet over medium heat, stirring often, until golden and fragrant, then set aside to cool slightly.
2. Add the Rice Chex cereal and Golden Grahams cereal to a large mixing bowl and sprinkle in about half of the toasted coconut.
3. In a microwave-safe bowl, combine the semi-sweet chocolate chips, caramel bits, and coconut oil or butter.
4. Microwave in 20–30 second bursts, stirring after each, until the mixture is completely melted and smooth.
5. Stir in the vanilla extract and fine sea salt until fully combined.
6. Pour the warm chocolate-caramel mixture over the cereal and coconut, then gently fold with a spatula until all the cereal is evenly coated.
7. Transfer the coated cereal to a large zip-top bag or lidded container, add the powdered sugar, seal, and shake until every piece is well covered.
8. Spread the puppy chow onto a parchment-lined baking sheet and sprinkle with the remaining toasted coconut and mini chocolate chips, if using.
9. Allow the mix to cool completely, then break apart any large clusters before serving or storing.
