Ingredients

1 pound shrimp, large or jumbo, peeled and deveined

1 lemon, zest and juice

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1/2 teaspoon red pepper flakes

1 cup strawberries, diced

1/4 cup fresh basil, chopped

2 tablespoons red onion, finely chopped

1 teaspoon honey or maple syrup

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups cooked white rice (optional)


Instructions

1. In a bowl, mix strawberries, basil, red onion, and honey or maple syrup. Add salt and pepper. Stir gently and set aside.

2. Heat olive oil in a skillet over medium-high heat. Sear shrimp 1–2 minutes per side until pink and lightly browned. Remove from pan.

3. Lower heat, add butter and garlic to skillet. Sauté 30 seconds, then stir in lemon zest, juice, red pepper flakes, salt, and pepper. Simmer 1 minute.

4. Return shrimp to skillet, toss in lemony sauce. Heat 1 more minute.

5. Serve shrimp over rice. Top with fresh strawberry-basil salsa and garnish with basil and lemon slices.

Notes

Use fresh strawberries for the best flavor and texture in the salsa.

Don’t overcook the shrimp—they only need a few minutes per side.

For a smokier version, grill the shrimp instead of searing.
