Ingredients
3 cups cubed butternut squash
1 lb steak (sirloin, ribeye, or flat iron)
1 cup couscous
3 cloves garlic, minced
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1 tablespoon chopped parsley
2 tablespoons olive oil
1/2 cup heavy cream or Greek yogurt
Salt and pepper, to taste
Instructions
1. Preheat the oven to 400°F. Toss the butternut squash with 1 tablespoon olive oil, salt, pepper, and half of the chopped herbs. Spread on a baking sheet and roast for 25–30 minutes until caramelized.
2. Prepare couscous according to package directions. Fluff with a fork and season with a pinch of salt and a drizzle of olive oil.
3. Pat steak dry and season with salt, pepper, and remaining herbs. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear steak for 3–4 minutes per side. Remove and let rest 5–10 minutes before slicing.
4. In a small pan, sauté garlic in olive oil over low heat. Add cream or yogurt and chopped parsley. Stir and simmer until slightly thickened.
