Ingredients

1 pound ground beef

3 cups diced potatoes

1 ½ cups diced carrots

1 cup green peas

1 medium onion, diced

2 cloves garlic, minced

4 cups beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

1 bay leaf

1 teaspoon salt

½ teaspoon black pepper

½ cup shredded cheddar cheese (optional)

Chopped parsley for garnish (optional)


Instructions

1. In a large soup pot, cook ground beef over medium heat until browned. Drain excess fat if needed.

2. Add chopped onions and minced garlic to the pot. Sauté for 3–4 minutes until softened and fragrant.

3. Stir in the diced carrots and potatoes. Cook for about 5 minutes.

4. Add tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir well.

5. Pour in the beef broth and toss in the bay leaf.

6. Cover and simmer for 20–25 minutes until potatoes and carrots are fork-tender.

7. Stir in green peas and simmer uncovered for 5 more minutes.

8. Remove bay leaf. Serve hot with cheddar cheese and chopped parsley if desired.

Notes

For a thicker soup, mash some of the cooked potatoes into the broth before serving.

Want a creamier texture? Stir in a spoonful of mashed potatoes near the end of cooking.
