Ingredients
1 pound ground beef (85% lean)
1 medium onion, chopped
2 cloves garlic, minced
1 cup carrots, diced
1 cup frozen peas
1/2 cup corn
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1/2 cup beef broth
Salt and pepper, to taste
4 large russet potatoes, peeled and cubed
4 tablespoons butter
1/2 cup milk
1 teaspoon fresh thyme (optional)
Instructions
1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
2. Add chopped onion and garlic. Cook until softened.
3. Stir in tomato paste, Worcestershire sauce, salt, pepper, carrots, peas, and corn.
4. Add beef broth and simmer for 10 minutes until slightly thickened.
5. Boil potatoes in salted water until fork-tender, 15–20 minutes.
