Ingredients
9 oz cheese tortellini
1 lb shrimp, peeled and deveined
1 cup heavy cream
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tbsp butter
1 tbsp olive oil
1 cup spinach (optional)
1/3 cup sun-dried tomatoes (optional)
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Boil a large pot of salted water and cook the tortellini according to the package directions. Drain and set aside.
2. In a large skillet, melt butter with olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for 1–2 minutes per side until pink. Remove and set aside.
3. In the same skillet, add more butter if needed. Sauté garlic until fragrant, about 1 minute. Add spinach or sun-dried tomatoes if using.
4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan until the sauce thickens. Season with salt and pepper.
5. Return the shrimp and tortellini to the skillet. Toss gently to coat everything in the sauce.
6. Serve hot, garnished with fresh parsley or basil and cracked black pepper.
Notes
Use fresh or frozen (thawed) shrimp for best results.
Add a splash of pasta water if the sauce becomes too thick.
Don’t overcook shrimp—they should just turn pink and opaque.
