Ingredients

4 lamb shanks

2 onions, chopped

3 carrots, peeled and chopped

5 cloves garlic, minced

2 sprigs fresh rosemary

3 sprigs fresh thyme

2 tablespoons tomato paste

1 ½ cups red wine

2 ½ cups beef or lamb stock

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Pat lamb shanks dry and season with salt and pepper. Heat olive oil in a Dutch oven and sear shanks until browned on all sides.

2. Remove shanks and sauté onions, carrots, and garlic until soft. Stir in tomato paste and cook for 1-2 minutes.

3. Deglaze pot with red wine, scraping browned bits. Simmer until wine reduces by half.

4. Return lamb shanks to the pot, add rosemary, thyme, and stock to cover ⅔ of meat. Simmer.

5. Cover and braise in preheated oven at 325°F (163°C) for 2.5 to 3 hours, until lamb is fork-tender.

6. Remove lamb, strain sauce if desired, and reduce gravy on stovetop for intensified flavor.

7. Serve hot with mashed potatoes, polenta, or crusty bread.
