Ingredients

1.5 pounds mushrooms (cremini and white button)

1 medium yellow onion, diced

4 cloves garlic, minced

3 tablespoons butter

0.25 cup all-purpose flour

4 cups vegetable broth

1 cup heavy cream

1 teaspoon dried thyme or 2 teaspoons fresh

1 teaspoon salt

0.5 teaspoon black pepper

fresh parsley for garnish


Instructions

1. In a skillet, melt the butter over medium heat. Add diced onion and sauté for 5 minutes until soft. Add garlic and cook for 1 more minute.

2. Stir in the mushrooms and cook for 8 minutes until they release moisture and shrink.

3. Sprinkle in the flour and stir for 2 minutes to eliminate raw taste.

4. Transfer the mushroom mixture to a slow cooker. Pour in vegetable broth, add thyme, salt, and pepper. Stir.

5. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.

6. Blend half the soup using an immersion blender to create a creamy but textured consistency.

7. Stir in the heavy cream and cook for another 10–15 minutes on LOW until heated through.

8. Garnish with parsley and serve warm.

Notes

For a deeper flavor, add 1/4 cup of dry white wine during step 2 and cook it off before adding flour.

Use an immersion blender carefully to control the texture—fully or partially blended depending on preference.

If making dairy-free, substitute heavy cream with unsweetened coconut milk and butter with olive oil.
