Ingredients
1 lb ground beef
4 flour tortillas (8–10 inch)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 medium tomato, diced
1/2 small white onion, diced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 tbsp butter or oil (for skillet)
Instructions
1. Heat a skillet over medium-high heat. Add the ground beef, season with salt, pepper, and garlic powder. Cook until browned and slightly crispy. Drain excess fat.
2. In a bowl, combine the cooked beef with diced tomatoes and chopped onion. Stir to mix well.
3. Lay out tortillas and sprinkle cheddar and mozzarella cheese on one half. Top with beef mixture and fold over to form a half-moon shape.
4. Heat butter or oil in the skillet over medium heat. Cook each quesadilla 2–3 minutes per side until golden brown and the cheese is fully melted.
5. Let rest 1 minute, then slice and serve hot with your favorite dips.
Notes
Don’t overload with filling or the tortilla might tear during cooking.
