Ingredients

2 boneless skinless chicken breasts

2 tablespoons olive oil

3 garlic cloves, minced

1 cup heavy cream

1⁄2 cup grated Parmesan cheese

3 cups fresh spinach

1⁄3 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1⁄2 teaspoon salt

1⁄2 teaspoon black pepper

Instructions

1. Preheat oven to 375°F (190°C).

2. Pat chicken breasts dry and season with salt, pepper, and Italian seasoning.

3. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden. Remove and set aside.

4. In the same skillet, add garlic and sauté for 1 minute until fragrant.

5. Pour in the heavy cream and bring to a simmer.

6. Stir in Parmesan cheese until melted and smooth.

7. Add sun-dried tomatoes and spinach. Cook until spinach wilts and sauce slightly thickens.

8. Return chicken to skillet, spoon sauce over top.

9. Transfer to oven and bake for 20-25 minutes until chicken is cooked through.

10. Let rest 5 minutes before serving. Spoon extra sauce on top and serve hot.

Notes

Pound chicken evenly to ensure even cooking.

For more depth, add a pinch of red pepper flakes or a splash of white wine to the sauce.

You can substitute sun-dried tomatoes with roasted red peppers or cherry tomatoes if preferred.
