Ingredients

1 pound ground beef

2 cups sliced mushrooms

3 cloves garlic, minced

3 tablespoons soy sauce

1 teaspoon red pepper flakes or 1 tablespoon chili paste

1 zucchini, sliced

1 bell pepper, sliced (any color)

1 cup broccoli florets

2 green onions, chopped

2 cups cooked white rice


Instructions

1. In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, breaking it up with a spoon as it cooks.

2. Add the sliced mushrooms and minced garlic. Cook for 4-5 minutes until the mushrooms soften and release their juices.

3. Stir in the soy sauce and chili paste or red pepper flakes. Simmer for 2-3 minutes to blend the flavors.

4. In a separate skillet (or the same one after removing the beef), sauté the zucchini, bell peppers, and broccoli with a splash of oil until just tender but still crisp. Season lightly with soy sauce.

5. Assemble the bowl by adding rice, spooning on the spicy beef, and topping with the sautéed vegetables. Garnish with green onions and serve hot.

Notes

Use low-sodium soy sauce if you’re watching your salt intake.
