Ingredients
2 ribeye or sirloin steaks
1 cup cherry tomatoes
8 ounces fresh mozzarella (sliced)
1/2 cup fresh basil leaves (chopped)
1/3 cup balsamic vinegar (for glaze)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Pat the steaks dry and season both sides with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear the steaks 3–4 minutes per side for medium-rare. Remove and let rest.
3. In the same skillet or in the oven, roast the cherry tomatoes with a little olive oil, salt, and pepper at 400°F for 10–15 minutes until blistered.
4. In a saucepan, simmer the balsamic vinegar until reduced by half and thickened (10–12 minutes).
5. Slice the steak and lay it on a serving platter. Top with mozzarella slices, roasted tomatoes, and chopped basil.
6. Drizzle generously with the balsamic glaze and serve immediately.

For extra depth, use aged balsamic vinegar when reducing for glaze.
