Ingredients

300g flank steak or sirloin, thinly sliced

200g ramen or egg noodles

2 tablespoons light soy sauce

1 tablespoon dark soy sauce

2 tablespoons hoisin sauce

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon brown sugar

1 tablespoon cornstarch

1 teaspoon sesame oil

1 teaspoon chili flakes or 1 fresh red chili, sliced (optional)

100g broccolini or bok choy

2 green onions, sliced

1 teaspoon sesame seeds


Instructions

1. Slice the beef thinly against the grain and toss it with cornstarch, 1 tablespoon soy sauce, and sesame oil. Let it marinate.

2. Cook noodles according to package instructions until al dente. Drain and set aside.

3. Heat a wok or skillet over high heat. Sear beef slices until browned. Remove and set aside.

4. Add a bit more oil, then stir-fry garlic, ginger, and chili for 30 seconds until fragrant.

5. Pour in remaining soy sauces, hoisin sauce, brown sugar, and 2 tablespoons water. Simmer until sticky.

6. Return beef to the pan, toss in noodles and greens. Mix until noodles are well coated and greens are tender-crisp.

7. Garnish with green onions and sesame seeds. Serve hot.

Notes

For the best texture, don’t overcook your noodles—keep them slightly chewy.

You can swap beef with tofu or mushrooms for a vegetarian option.
