Ingredients

3 overripe bananas

2 large eggs

1/2 cup Greek yogurt or unsweetened applesauce

1 teaspoon vanilla extract

1 and 1/2 cups whole wheat flour or all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/3 cup chopped walnuts or sugar-free dark chocolate chips (optional)


Instructions

1. Preheat the oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.

2. In a mixing bowl, mash the bananas until smooth.

3. Add eggs, yogurt (or applesauce), and vanilla. Mix until fully combined.

4. Stir in flour, baking soda, salt, and cinnamon (if using). Mix just until combined.

5. Gently fold in chopped nuts or chocolate chips, if using.

6. Pour batter into prepared pan and smooth the top.

7. Bake for 50-60 minutes, or until a toothpick comes out clean.
