Ingredients
1 cup sushi rice
1 1/4 cups water
3 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
4 nori sheets
1/2 cup sushi-grade tuna, finely diced
2 tablespoons spicy mayo (mayonnaise + Sriracha)
4 imitation crab sticks, shredded
1/2 avocado, sliced
1/2 cucumber, julienned
2 tablespoons tobiko (fish roe)
1 tablespoon sesame seeds (optional)
Instructions
1. Rinse the sushi rice until the water runs clear. Cook with water per package instructions. While warm, season with vinegar, sugar, and salt. Let cool.
2. Mix diced tuna with spicy mayo and chill until ready to roll.
3. Prepare fillings: shred crab, slice avocado, and julienne cucumber.
4. Place plastic wrap on a bamboo mat. Put half a sheet of nori shiny side down. Spread rice evenly on top and sprinkle with sesame seeds.
5. Flip the nori so rice is face down. Add fillings (crab, avocado, cucumber OR spicy tuna and avocado) along one edge. Roll tightly using the mat.
6. Slice each roll into 6–8 pieces using a damp, sharp knife.
7. Top spicy tuna rolls with tobiko and serve with soy sauce, pickled ginger, and wasabi.
Notes
Wet your hands often while handling sushi rice to prevent sticking.
Use a very sharp knife and clean it after each cut for perfect slices.
Always use sushi-grade fish when using raw tuna.
