Ingredients

4 bone-in pork chops

5 medium Yukon gold potatoes, sliced

1 large yellow onion, sliced

3 garlic cloves, minced

4 sprigs fresh thyme

1 cup chicken broth

1 cup heavy cream

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil


Instructions

1. Pat the pork chops dry and season with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat and sear pork chops on both sides until golden. Remove and set aside.

3. In the same skillet, melt butter. Add sliced onions and minced garlic. Cook until soft and fragrant.

4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and add thyme sprigs.

5. In a greased baking dish, layer sliced potatoes. Pour half of the creamy onion mixture over the top.

6. Place seared pork chops over the potatoes and pour the remaining sauce over the chops.

7. Cover the dish with foil and bake at 350°F (175°C) for 45 minutes.

8. Remove foil and bake for an additional 15–20 minutes, until golden and bubbly.

9. Let it rest for 5 minutes before serving, garnished with extra thyme if desired.

Slice potatoes evenly so they cook through properly.
