Ingredients

20 frozen dumplings

1 can (13.5 oz) coconut milk

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons Thai red curry paste

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon rice vinegar

2 tablespoons chili oil or crispy chili in oil

1 teaspoon cornstarch

1 tablespoon water (for slurry)

2 tablespoons fresh cilantro, chopped

1 tablespoon toasted sesame seeds


Instructions

1. In a saucepan over medium heat, combine coconut milk, garlic, ginger, red curry paste, soy sauce, brown sugar, and rice vinegar. Simmer for about 5 minutes.

2. Stir in cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water) and simmer until the sauce slightly thickens.

3. Preheat the oven to 375°F (190°C).

4. Grease a medium baking dish and arrange the frozen dumplings in a single layer.

5. Pour the warm sauce over the dumplings evenly.

6. Cover the dish with foil and bake for 25 minutes.

7. Remove foil and bake uncovered for another 10 minutes until bubbly.

8. Garnish with chili oil, sesame seeds, and chopped cilantro before serving.

Notes

Use frozen dumplings straight from the freezer—no need to thaw.

To adjust spice, reduce chili oil or use a mild red curry paste.

For extra crisp texture, broil the top for 1-2 minutes after baking.
