Ingredients

1 lb shrimp, peeled and deveined

0.5 lb mixed seafood (scallops, crab, or white fish – optional)

4 slices thick-cut bacon, chopped

1 medium yellow onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 cup corn kernels (fresh or frozen)

14.5 oz can diced tomatoes, drained

2 cups chicken or seafood broth

1 cup heavy cream

4 oz cream cheese, softened

1 tbsp chili powder

1 tsp smoked paprika

0.5 tsp cumin

1 tsp salt

0.5 tsp black pepper

2 tbsp fresh parsley or cilantro, chopped

sour cream, for topping (optional)


Instructions

1. In a large Dutch oven, cook chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside, keeping rendered fat in the pot.

2. Add diced onion and bell pepper to the pot; sauté for 5 minutes. Add garlic and cook for another minute.

3. Stir in corn, drained tomatoes, chili powder, smoked paprika, cumin, salt, and pepper. Mix to combine.

4. Pour in broth and bring mixture to a gentle simmer. Let cook for 10 minutes to develop flavor.

5. Reduce heat, stir in cream cheese until smooth, then pour in heavy cream. Stir until fully incorporated.

6. Add shrimp and mixed seafood. Simmer for 5-7 minutes until cooked through and opaque.

7. Return bacon to the pot, stir well, and adjust seasoning if needed. Serve hot with sour cream and herbs on top.

Notes

Thaw frozen seafood completely and pat dry before adding to avoid watering down the broth.

For extra depth, swap half the cream with coconut milk.

Garnish right before serving to keep herbs fresh and bright.
