Ingredients

3 large egg yolks

1/2 cup granulated sugar

1 cup mascarpone cheese

3/4 cup heavy cream

1 1/4 cups strong brewed espresso or coffee (cooled)

2 tablespoons coffee liqueur (optional)

18 ladyfingers (Savoiardi)

2 tablespoons unsweetened cocoa powder

Whole coffee beans or chocolate shavings for garnish (optional)


Instructions

1. Brew strong coffee or espresso, mix with coffee liqueur if using, and let it cool completely in a shallow bowl.

2. In a heatproof bowl, whisk egg yolks and sugar over a pot of simmering water until thick and pale. Let cool slightly.

3. Add mascarpone to the yolk mixture and mix until smooth and creamy.

4. In another bowl, whip heavy cream until soft peaks form, then gently fold it into the mascarpone mixture.

5. Quickly dip each ladyfinger into the coffee mixture and place at the bottom of serving cups.

6. Add a layer of mascarpone cream over the ladyfingers.

7. Repeat layers, ending with mascarpone on top.

8. Chill the assembled cups in the refrigerator for at least 4 hours or overnight.

9. Just before serving, dust generously with cocoa powder and top with coffee beans or chocolate shavings if desired.

Notes

For a stronger coffee flavor, let the ladyfingers soak just a second longer—but not too long or they’ll fall apart.

To make this alcohol-free, simply skip the coffee liqueur and use decaf espresso for a kid-friendly version.

Chill overnight for best texture and flavor development.
